Baking Sheet Teriyaki Stir-Fry and Zucchini Noodles

This is a quick, easy, one pan dinner.  Serve this over zucchini noodles or rice.  This is easy to make ahead of time and can be done in 30 minutes.  Our Hawaiian Luau Teriyaki adds a sweet pineapple flavor and smells delicious while baking.

Stir Fry

4 carrots peeled and cut on the diagonal

2 handfuls broccoli florets

1 large bell pepper sliced

5 chicken thighs cut into chunks

2 green onions sliced for garnish

1/2 cup Kelis Hawaiian Luau Teriyaki Sauce plus more for serving

Preheat oven to 425 degrees

On a baking sheet (cover with foil for easy clean up) spread carrots, peppers, and chicken drizzle with sauce saving enough for the broccoli. Mix so sauce evenly covers. Bake for 10 minutes.  Stir.  Add broccoli drizzle with remaining sauce stir.  Bake for another 10 minutes until veggies are soft and chicken is done.

Serve over zucchini noodles with additional drizzle of sauce and garnish with green onions.

Zucchini Noodles

3 small zucchini spiralized or julienned

Preheat oven to 200 degrees.  Squeeze the noodles to remove some of the water. Cover a baking sheet with paper towels to absorb the water from the zucchini.  Spread the noodles evenly on the paper towel and sprinkle with salt.  This will sweat the noodles and remove some water.

Bake for 20-30 minutes.  Remove from oven and transfer to a plate with fresh towels.  Let rest.

You can make the noodles ahead of time or while they are baking prep the stir fry.

Teriyaki Glazed Ham with Pineapple Compote Recipe

Is it the Holidays yet?  My favorite time of year to spending quality time in the kitchen cooking up old favorites and trying my hand at a few new ones.  This is kind of a twist on an old favorite.  This teriyaki glazed ham is covered with our delicious Ginger -Garlic Teriyaki Glaze.   It’s savory and sweet and is just the perfect complement to ham.  Serve it with our pineapple compote and it will be a crowd pleaser!

Teriyaki Glazed Ham with Pineapple Compote

Ingredients:

  • 1 spiral-spiced half ham
  • 15-20 whole cloves
  • ¾ cup Keli’s Hawaiian Teriyaki Baste & Glaze
  • pineapple compote, recipe follows

Directions:

  1. Preheat the oven as directed on the ham package.
  2. Cut cross pattern in top of ham and insert whole cloves and follow the instructions for baking the ham.
  3. Remove ham from oven about 30 minutes before the end of the warming time.
  4. Baste top with Keli’s Hawaiian Teriyaki Baste & Glaze.
  5. Bake for remaining 30 minutes.
  6. Transfer to cutting board and slice.
  7. Serve with pineapple compote.

Pineapple compote:

  • 1 can pineapple tidbits with juice
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • cornstarch to thicken                                                                                     
  •   Place pineapple tidbits with juice, brown sugar, and cinnamon in a small sauce pan. Heat to a boil. Add cornstarch (mixed with water) to thicken.

Caribbean Jerk Teriyaki Chicken Bowl Recipe

Try this delicious Caribbean jerk teriyaki chicken bowl recipe that’s easy to make and a real crowd pleaser. For best results use our Keli’s Hawaiian Luau Teriyaki sauce.

Ingredients:

  • 1 ½ cups long grain Jasmine rice
  • 1 can coconut milk
  • 1 Jalapeno(diced)
  • 2 tsps. allspice
  • 1 can black beans
  • 2 large chicken breasts(filled)
  • 1 15oz. bottle Keli’s Hawaiian Luau Teriyaki
  • ½ cup Carribean white rum
  • 1 tsp. coconut oil
  • 2 large plantains(sliced)
  • 1 20 oz. can pineapple chunks
  • Green onion or cilantro(garnish)

Directions:

1.) Cook rice, coconut milk, jalapeno, and 1 tsp. allspice in rice pot.

2.) Marinade in zip lock baggie chicken breasts, 1 tsp. allspice, and 1 bottle of Keli’s Hawaiian Luau Teriyaki (reserve ½ cup for glaze)

3.) Brown in skillet sliced plantains, set aside.

4.) Remove chicken from marinade.  Grill with pineapple on a grill pan till brown.

5.) Add black beans to cooked rice and divide into bowls.

6.) Top with sliced chicken, plantains, and grilled pineapple chunks.

7.) Heat remaining teriyaki and drizzle over top. Garnish with green onions or cilantro.

Serves: 4

Keli’s Hawaiian at the Seaside Beach Volleyball Tournament

The 2015 Seaside Oregon Beach Volleyball Tournament starts today and the Keli’s Hawaiian teriyaki chicken and noodle booth will on the beach near the turnaround.  Ever year we have the pleasure of serving the food for the world’s largest amateur beach volleyball tournament right here in Seaside OR.  Event organizers have estimated that more then 1,150 teams will be competing on 120 courts across the beach.  Our food booth with be serving up teriyaki chicken, yakisoba noodles, hamburgers, hotdogs, salads, strawberry lemonades, strawberry shortcakes, coffee, and breakfast.  The Keli’s booth will also have snacks and beverages throughout the weekend.  The beach volleyball tournament kicks off early Friday morning and continues until about 6pm on Sunday.  The highlights will be the men and women’s doubles final match which is on center court Saturday evening and the 4 person mixed gender finals which is the last game played Sunday evening.  If you plan on watching the action on center court get here early because it fills up quickly.  I hope to see you all at the beach. -Keli

Keli’s Organic Sauce Line Moves Closer to Launch

5955549Keli’s Organic Sauce is in the final phases of development.  The labels have been designed, the recipe perfected, and all Organic ingredients sourced.  The recipe and ingredients are complete and ready for Organic Certification.  The first sauce we are going to launch is a sesame ginger sauce called Sesame Island Teriyaki which will be Organic and Gluten Free.  At our Pacific Northwest test kitchen we have been taste testing the new sauce line and have received rave reviews.  We have already received interest from big retailers such as Costco and others to carry our new sauce healthy line of sauces.  The official Keli’s Organic sauce launch date will be revealed soon.  Check back often or subscribe to our newsletter for updates!

Keli’s Hawaiian Grill will be selling our delicious food at Sunday Market in Astoria Oregon for the entire summer!  That’s right folks, get your favorite Hawaiian fare every Sunday right here in Clatsop County. We are very particular about the festivals we do and have decided the Sunday market is a perfect fit for our new healthier Organic Chicken option.  The Astoria Sunday Market was officially incorporated in 2000 and is one the best markets around.  Shoppers from across the Pacific Northwest flock to the Sunday Market for the unique, hand crafted, and local products vendors offer.  The Astoria Sunday Market also has a big food court with many different food options from around the world!  Keli’s Hawaiian Grill will be serving up our delicious Organic Chicken, Yakisoba Noodles, Rice, Chicken Skewers, Pot Stickers, Egg Rolls, Macaroni Salad, Grilled Veggies, and Strawberry Lemonade.  Don’t forget to add your favorite sauce from our Keli’s Hawaiian Sauce Line.  To find the Keli’s Hawaiian Grill booth just head to the North end of the Sunday Market and turn right into the food cart and we are the first booth on the corner!  You can’t miss us!  Cya at the Astoria Sunday Market!
